Vinification and maturation<\/strong>: the grapes are harvested at the beginning of September, drying for 3 month all the grapes, de-stemming, pressing, cryomaceration, controlled-temperature fermentation with cultured yeasts and simultaneous malolactic, followed by maturation in new French oak barriques about 36 months and after the bottling aging other 24 month in ours bottles storage.\r\n<\/p>\r\n

Technical data<\/strong>:\r\nalcohol 17%\r\nresidual sugar 5 g\/l\r\ntotal acidity 10 g\/l\r\ndry extract 38 g\/l\r\n<\/p>\r\n

Looking to the future while maintaining strong ties to our roots and family winemaking tradition: 100% Cabernet, Tisbe is an excellent expression of the typicality of our wines, with an elegant and harmonious personality.<\/p>\n

The desire to experiment with our techniques led to the creation of Tisbe<\/strong>. It is not common to find Cabernet Sauvignon<\/strong> in the Valpolicella area, Stefano decided to plant it in 1990 as a challenge to his neighbours, having a vineyard with perfect characteristics for this grape.
